Celiac Disease Support Group
Celiac disease is an auto-immune disorder of the digestive system that occurs in genetically-predisposed individuals. It is characterised by damage or flattening to all or part of the villi lining the small intestine, which interferes with the absorption of nutrients. This damage is caused by eating anything with gluten (gliadin), a protein found in wheat, rye, and barley...

I am so pissed off...we had to go into work early today to do waht is called "skin sweeps" i work in long term care and all nurses go in once a month to check all the residen's skin for breakdown...anyway...my director of nursing went to get "everyone" breakfast..guess what that was...amazingly warm, soft, fresh bagels with cream cheese!!! i could not even eat one...she asked before she left what everyone wanted...i just kept quiet while everyone yelled Panera!!! Damn i wanted one. Do you ever get over being pissed off about what you cannot eat?? I mean, i work with a bunch of educated medical professionals, and they act as though i am on a glutten free diet by choice!!

I gave my 2 week notice last Friday 13th. Now to join you fine people in a life of leisure and nothing else to do but to look out for myself....is it just me or does that sound pretty boring? My goal was to live to retire and I guess having to take early retirement because of health reasons wasn't exactly the way I had planned things. I just can't stay in that building that is reeking mildew...

I'm trying to exercise daily. I was doing fairly well until I sprained my ankle 2 weeks ago but now I'm getting back on the horse. Today I walked over a mile with my arm weights that are about 22lbs total. I was out of shape and it was hard on my arms. I also did my 30 situps. I'm also going to drink a lot of water and try to eat healthy. I do tend to have a sweet tooth but I'm cutting...
The only time I really got hot is when I dated a guy that would not make any accomdations for me whatsoever, told me I was just a picky eater, and would take me to a bakery time and time again, eat pastries in front of me while I went hungry, announcing that this was "my" problem. What a jerk.
The only way I have fought it is by learning really good GF cooking, making sure good tasty GF food is within reach. When they order out, I reach into my knapsack and get something I brought in just as good and just as tasty. Is it a hassle? Yes sometimes, but I`d reather deal with this than cancer. Everyone has health issues they have to hassle with.
Other hints- limit my grocery shopping to fruit, veggie and natural markets where I can get stuff I can eat. I stay away from the freezer section with all the premade goodies that I remember in regular supermarkets.
I will do batches of Pamela`s baked good treats and freeze separate pieces.
Make up batches of GF pasta with awesome sauces, freeze portions, stir fry`s whatever, freeze individual servings. Then when lunch time comes, while they are eating their fast food garbage, I pull out an awesome home cooked main course and zap it. They say "Boy what are you eating, sure smells good!"
Now who is eating better?
AT restauarants, I scan the menu and say "What CAN, I eat? Usually not too much. But some restaurants will do you special requests if you ask nicely. I am getting quite bold, and surprisingly, most are really awesome and will make you something nice and GF. Don`t have to get fancy, "I`m allergic to wheat and flour"(not really the actual fact , but sounds bettet than saying you have a disease). "Could you sautee my seafood or fish with cornstarch instead of flour? "
Usually they say sure. Whoda thunk? Sometimes they have to ask the chef if there is flour in the soup or sauce.
Be patient and the cook or chef most of the time will help you out. If they don`t, don`t go back there.
Just remember we are so far a small group. So no, people don`t think about it, but so what. Don`t take it personally, Just go to your handbag and pull out a nice
GF baked good and opo it in your mouth. No big deal!
Most of the people eating the carbed up bagels and fattening cream cheese shouldn`t be eating it for their health either. That`s their own loss.
Okay, some fast options good for diabetes and Celiacs---
Get a bunch of flash frozen chicken breasts (Walmart) they`re cheap. Thaw em out, put all on a baking sheet with a little olive oil and
seasoning mixes. Do the whole bag at once. bake em up. then saran them all and put them in the freezer. You can get one out in the A.M. it is thawed by lunch. Buy some sweet potatoes raw, and
take em to work and zap em in the micro for 8 mins. splenda, cinnamon, a bit of margerine- great for blood sugar. Or you can bake them on the same pan with the breasts and freeze them individual. If you keep going all day without eating it will ruin your health.
You have to carry your food. not a whole lot of options at work. I do. Bake batches of stuff when you aren't working. Don`t they have a cafeteria where you work with healthy stuff?
First I never leave home to work without food, and I try to bring something that looks so good or a chocolate that is gluten free, so people actually crave my food. Now I feel a lot better about my diet and I don't get so affected by it. You should try it, it feels so good that you are not the one craving ...
annoyed if people would ask me to eat wheat stuff after I had alread told them. But now I`ve figured out.---
1. They don`t get it. Some people are just dense , because they haven`t ever cooked and don`t know what stuff has in in. I couldn`t believe the stupidity. unbelievable.
2. They forget. At least they are offering me food, which is nice.
3. It`s just alot easier to say. I`m allergic to wheat. I can`t eat it. I`ll get sick. That`s it. They understand that. I don`t go into details. First, they haven`t heard of it, but they will. Alot of people have this and are being wrongly diagnosed with other stuff. Mark my words. This thing is going to snowball, and there are going to be some medical professionals looking pretty dumb and pretty greedy.
3. People don`t like hearing abou other people`s health issues. Just do what you need to do to stay healthy,
don`t bother getting into big explanations. Now GF for 3 years, it doesn`t even phase me.
The only times that I actually get a little pissy with things is when I don't want to cook and would love nothing more than having the ability to go through a quick drive-thru. I work 2-10pm and there are some nights when I get home that I just don't want to deal with cooking and dishes.
My anger issues (which are getting better) come more from feeling betrayed by my own body, not so much about other people.
Merry has some great advice in these threads and her posts have helped me tremendously whether she knows it or not.
Hang in there!
