Let me tell you my story and this may help, for the last 30 years I have always waitressed either to help my family out or as an extra job. I was sick a lot in the last ten years, my immune system was getting weakened by Celiac Disease. There was one place I worked that would only let us eat the bread when we worked, now I know that it was this that made me feel sick on the job, I liked working there but I always felt sick. I thought it must be the stress, even though the job did not seem stressful to me. Anyway, I ended up leaving. My next side job was at an Italian restaurant, I worked ther for over 7 years, depending on what I ate there I would feel sick, I only worked there one or two nights a week, anyway, I found out while I was working there I had CD amd ate accordingly and did not feel sick from that place anymore. However, serving pizza and all kinds of foods that I could not eat was extremely difficult. In other words from my point of view I would ask, do you want to first expose yourself to the gluten and do you really want to make stuff you can not even have a bite of ? This is truly very hard to do, please think long and hard about this or investigate baking for a GF bakery, there is a great need for this.....Good Luck...Donna
I agree - it would be very hard to deal with making all the delectable things full of gluten and not get to eat them, or worse, get sick from working around it all the time - some get sick from breathing in crumbs and flour in the air! But I think the future for fabulous and affordable GF baked goods will only increase. It seems that it's becoming the "hot topic" it should be and the awareness it being raised. So, consider being a GF baker, and starting a business with that, or work for a place that offers these items! We need more wonderful GF Bakers in the world!!
