It's is amazing how many people buy pumpkins for halloween for decoration and then later just throw them out.. I have been on my great pumpkin round up. I look for the pumpkins that have been thrown out but have not been carved out. I check to see if they are in good condition and not rotten. 99% of the ones thrown out are perfectly ok. The first thing I do is carve them up into pieces. I take out the seeds and roast them. Roasted pumpkin seeds are great for the Hubby because it promotes good prostrate health. It's also a good source of omega 3's and plant nutrients for good heart health, etc. Then I cook the pumpkin up and can or freeze the pumpkin mash . I'll use the mash latter for pumpkin pies, pumpkin bread, pumpkin soup, etc. When I'm finished I always save at least one pumpkin in the end to cut up and feed to the squirels. I have the healthiest and most robust squirels of the neighborhood. Not to mentioned spoiled!!! lol Got to go now... I have to beat out the garbage men for the pumpkins.
