Rose Petal Jam
Can't send someone you love a real rose, send them some Rose Petal Jam!
Now, here is the recipe
You need 125gm of red/pink rose heads
I picked mine off the bush once they had opened fully but before they literally wilted and faded. Because I collected them over time, I stored them in a plastic bag in the freezer. It didn't seem to affect them or their colour.
Half a cup of lemon juice
One and half cups of water
25gm of powdered pectin (JamSet)
Take only the petals, wash and drain thoroughly.
Add the water, sugar, petals and lemon juice into a large pot, dissolving the sugar over a low heat.
Once dissolved, bring the solution to the boil and simmer for 30 minutes. The colour of the petals diffuses into the liquid and the petals become soft.
Remove from heat, add a little of the liquid to the pectin, then add pectin to the pot. Bring back to the boil for 1 minutes.
Test the jam by placing a saucer in the freezer for 10 minutes, then drop a teaspoon of the jam onto the saucer. It should gel within 30 seconds and crinkle on the surface when you run your finger through it.
Place into sterilised jars, label and eat! Nice to have with scones, on toast or muffins. Would also make a nice addition to a sponge or sweet slice.

Oh that sounds wonderful. I will have to make a copy of it and save for the spring, May or so when my huge old fashioned rose out front blooms. It has hundreds of blooms daily and is so fragrant. Perfect for this recipe! Thanks for posting it.
