I just want to say, I made the absolutely BEST Vegetable Garlic soup for dinner tonite!!!!!
1 bulb garlic, sliced thin
2 onions, chopped
3 carrots, sliced in chunks
2 stalks celery, sliced
1/4 green pepper,minced
1/4 red pepper, minced
4 yellow potatoes, chunked
1 sm yellow zuccini, sliced thick
1 sm green zuccini, sliced thick
1 cup sugar snap peas
1 sm. can petite diced tomatoes
1 container organic Vegetable Broth, I use Wolfgang Puck
1 can Red Kidney Beans, drained
1 can Butter Beans, drained
pinch Red Chyenne Pepper
pinch Dried Basil
1/4 tsp. Dried Dill
1/2 tsp. Dried Parsley
1/4 tsp. Paprika
1 bay leaf
Sweat onions and carrots in very small splash of EVOO until soft. Add garlic. Cook until soft. Add celery and peppers. Cook low about 2 mins until bright. Add Tomatoes and spices and cook another 10 mins. Add broth and bring to boil. Add potatoes. Cook until fork tender. Add beans, zuccini and peas. Cook for a good 1/2 hour or so on medium until all flavors meld together and soup slightly thickens. Salt and pepper to taste. Serve!






I beg to differ.... I had the best garlic and veg soup yesterday.
Just a heap of everything that was available in a pot of stock with garlic cook, blend when cool and reheat as needed with a little added cream.

OK - I think that is good. I counted up and we ended up with about 10 different veg in the one I made - had so much that I have frozen a heap - will need to stop doing that or we will end up with no room in there for the meat.........LOL.

You know what I luv about butter beans? They thicken without the need for flour or corn starch. Cuts the carbs down and makes it so much healthier.

You girls are making me hungry!!! Mine is such an ol' fashion soup and much more simple,and a lot less variations of vegetables. How much would you have to spend on ALL those vegetables?? LOL i may try the butter beans,can I do that and use less potatoes?

Seeking, I buy my veggies fresh at a local farmers market so it isn't too bad pricewise. But really, when you consider the cost of buying packaged foods, fresh isn't really higher. Yes, butter beans are a great alternative to potatoes. Add them to all your soups and stews. They thicken well and add a little flavor. If you cook them long enough, they will completely disolve.
