Me vs. the Peanutbutter Egg Mood
Thursday, March 20, 2008 | A Funny story

I bought 2 Reese's peanutbutter eggs last week and have every intention of eating them. I think about eating one, and then I stop myself.  I think about how well I am doing with staying away from candy. I think about my blood sugar and my weight and the progress I have made with lowering them. I think about my husband and how he's in denial about his condition and if I ate one in front of him, it would make him frustrated. I think about chores and do them instead of eating these yummy peanutbutter eggs.  I mean, they're little! It's not like it's an entire boston cream pie or something. I just can't get myself to eat them. Last night, after dinner, I did a load of laundry, and I also had clean stuff in the dryer to fold and put away so I was in the bedroom folding. The peanutbutter eggs are in the bottom drawer of my night stand. I put them there so Bob wouldn't find them lol! I could have easily eaten one or both of them but I didn't. I just couldn't do it. This is becomming very comical. I wonder when I'll break down and eat them?

ANYWAY...I made a really nice dinner last night. Sauteed boneless pork chops with a blackberry sauce. It's the easiest dish to make and it tastes really good. I seasoned 4 chops with salt and pepper and browned them in olive oil for a few minutes and then took them out of the frying pan. Then I added a little more oil and sauteed shallots and dried thyme. Then I added chicken broth, port wine, balsamic vinegar and brought it to a boil. I mixed some corn starch and water together and added it to the sauce to thicken it up and turned the heat to low. Then I added the berries and a teaspoon of butter. Once the butter melted, I added the chops back and let them sit in the sauce for a few minutes before I transferred it all to a serving plate. I served it with steamed broccoli, carrots and cauliflower. It was really good. This was so easy to make - 30 minutes. And to think I wanted to order take out last night. We had jello pudding cups for dessert. I love to cook now. I didn't like to do this sort of thing for years, but with my new outlook on life, I'm finding that I can make healthy dishes that rival what I'd order in a restaurant and it's cheaper too!

Good going! I would like to tell you I'd keep those eggs in the drawer, but I"d be lying. I do pride myself in that I still have that ziplock bag of Skittles on my computer desk. Haven't touched them except to move them out of the way. You and all my other lady friends make me think I should throw away my pots and pans for lack of creative use. All my meals are simple. I guess it's because I have to take them to work. Keep 'em in the drawers and send me a pork chop.

I just know if I had those peanutbutter eggs in my house, I'd gobble them down in two seconds flat. Good for you for resisting. xoxo

Well good job with avoiding the peanutbutter eggs!! You're right, this is pretty comical! I try to let myself induldge in up to 100 "whatever" calories, once or twice a week. It keeps me from feeling like I'm depriving myself, and THIS time I'm doing better with my diet. By the way... I'm tring your recipe in a couple of nights! YUMMY!!
