Yummy, Moist Carrot Cake

If you have another healthy and yummy recipe then please share it.

1/2 cup applesauce
1/2 cup oil
4 eggs
2 Cups grated Carrots
1 Can (8-15 oz) DRAINED pineapple -so no juice
3/4 Cup chopped walnuts
Optional - 1 Cup cooked and drained raisins
Optional - 1/2 Cup coconut
Then combine with dry ingredients below.

2 Cups Flour
1 1/2 C Sugar
2 teaspoons baking powder
2 teasp. cinnamon
1 teasp. baking soda

Bake at 350 for 50-60 minutes, until toothpick comes out dry.
Once cool frost with cream cheese frosting and eat ( :

    I made this night before last. VERY GOOD. Got lots of raves at the dinner table. Was better the next day even.

    I am the worst baker on the planet but I adore carrot cake and would love to make this for Thanksgiving! A dumb question:

    What size pan did you use?

    I use two 8 inch rounds.

    I used a 9 x 13 pan. You will like this cake!!
