I threw this together because we love to make black bean burritos. And when I started the VEGGIE thing, I figured why not try to addapt a favorite. When I read the receipe for the bean dip here, I added the cilantro & lime juice, which made it taste so fresh.
AND, I never really cook with onions, because I HATE them, when they are call for I either omit them or just use a small amount of onion powder. If you want, I guess you would add them with the garlic.

Black Bean Suprise!

After being on my all veggie cleanse diet for now 4 days I tried to get creative. We LOVED THIS!!!
This was the first week I have ever even tired the SURPRISE ingredient. But after a week of only veggies, I had to try it! If you try this let me know what you think!
BLACK BEAN SUPRISE
1 Can Black Beans - Drained
1 can Rotel Tomatoes â?? Drained
2-3 cloves of chopped Garlic
2-3 tbsp of fresh cilantro
Juice from 1 lime
½ tsp of the following
Cummin
Celery Salt
Chili Powder
Black pepper
SURPRISE â?? 1 pkg of hard Tofu
Day Before, press/ squeeze water from tofu & freeze in a ziploc bag. (freezing tofu changes the texture, more like ground beef))
Defrost tofu & while in Ziploc squeeze out any excess water
Crumble tofu & heat in skillet on Medium heat. Stir in garlic & dry spices. Cook until about 10 â?? 15 min and the tofu is crisp/ browned and fragrant.
Add drained beans, Rotel & lime juice. Add cilantro to taste. Continue to simmer for about 15 min. Garnish with additional cilantro.
Would be great served over brown rice or with corn tortillas.
For convenience & to save a little time:
use chopped refrigerated garlic
use bottled lime juice
take the leaves & put in a glass to â??cutâ?? them with scissors
For a milder version use the â??mild Rotel.â?? If you want it spicier add a little cayenne!
