Anybody have any killer, easy risotto recipes?

My wife & I would like to bathe in risotto. Any super recipes???

Risotto is NEVER easy as the cooking process itself is very time consuming. I followed the recipe on the box with the chicken broth and mushrooms and it pretty good. -

Thanks, Rubella. I was beginning to think you are the only one on DS who isn't asleep. Sara has made it, but so far it is a work in progress. My PCA, Tom, makes a killer Risotto, but he is experimenting. -

On Thanksgiving day, I will go boldly where no man has gone: I'm going to 'wing it' with a serving of impromptu cheese and pea risotto! Just FYI, I just found out that arborio rice can be used for risotto: I've been having trouble finding a box labeled just 'risotto' in the rice isle. Sometimes I wonder if other people dabble with alternative starch dishes for their presentations. Hey, one is a lonely number lol.
