There is nothing more satisfying to me than cooking a great meal for my family & friends.
I can cook any type of cuisine. So lets share some GOOD EATS!!!!
Gently boil Chicken in chicken broth, loaded with onions, garlic and a sprinkling of peppercorns.
Let chicken drain, and cool. Strain broth.
Season the broth to your liking, cut chicken.
Bring to boil the strained, seasoned broth, add fresh pasta. When pasta is al dente, add chopped chicken and enjoy. Or use rice. Sometimes I spice it up with some chile pepper.
1st recipe, Italian meat balls,
1lb. ground chuck
1lb. Italian sausage
1c. " " bread crumbs
1 1/2c parmesan or romano cheese or mixed
1c diced fine yellow onion
1/4c crushed garlic
2 eggs
1c crushed tomatoes from a can
3/4 water
1ts salt
1ts pepper
wash hands & mix very well, form into 2'balls
brown on all sides in olive oil. Then carefully
put them into your favorite red sauce & simmer
for 1 1/2 hours. skim the remaining grease from
the top and discard. serve with spaghetti or your
favorite pasta!!!
Avocado tip: To quickly ripen an avo, store with apples. I place them in a dish on my counter, and usually ready the next day. I have forgotten them, and found them spoiled in a few days.....
Yeah, we had avo, tom, bacon, egg salad for dinner.
The perfect boiled egg. Bring water and eggs to a boil, and let boil for 1 minute. Turn off heat, cover and let set on burner for 6 minutes. Run under cold water or set in iced water for another 6 minutes, peel and eat.

2 thighs
2 breasts
2 legs,
1 med. yellow onion
1 can diced tomatoes
1c pino' grigio
2c chicken stock
1tsp chopped fennel seed.
3 garlic cloves chopped
2tsp cavenders all purpose greek spice. this spice is in most stores
3tbsp olive oil
season chicken w/ cavenders
heat oil med heat and brown chicken on all sides
remove chicken
add onions till lightly brown
add wine and reduce to 1/2
add tomatoes & stock & garlic, fennel
reduce a bit more 1/4
add chicken back & simmer for about an hour and a 1/2
serve with garlic mashed potatoes or cheese ravioli with
romano cheese. & salad.
sometimes I add different types of olives and fresh fennel
and sometimes use different spices fresh rosemary

Home made pizza. Make it don't order it~ It's very easy! If you don't want to make the dough, then buy the frozen bread dough! Yup, we had pizza for dinner!
oOoREBoOo, yep, I've made pizza with bread dough. If you want very thin crust, take 2 extra large
flour tortillas spread some of your sauce on top of the 1st one. then some cheese, put the other tort.
on top of the 1st one, spread more sauce & cheese, and any other toppings. Get a large oven safe
skillet & heat to med hi, add 1tbs, olive oil and coat the bottom evenly. Put your tortilla pizza in the
pan and let the bottom brown, about 4-5min. Have your oven broiler on hi and slide the top of the
pizza under the broiler for 2-3min. If your skillet is not oven safe slide the pizza off onto a alum.
pizza pan. This makes very crispy thin crust pizza's.

Yes I will!!! We follow a motorcycle racing series. In the summer we go to at least 10 all over the
country. But there are 2 races close to home that are the biggest. 20,000 people. I cook for over
100 friends. I always cook Jambalaya for that many. Plus the main course. One year I cooked a
200lb. hog down in the in-field all night. I had it done about right when all my bud's showed up at
race time. I was so tired that I watched the races from my buddies motorhome with one eye open!!! LOL
I think I'll save that idea for the last INSANEVEK MEAL!!! Might as well go out with

add carrots & celery, cook for about 12 min. and add the rest except the cabbage.
Shred the roast any size you want. add & cook for about 20min. add the " " and
stir real good. Turn off heat and cover it. Let sit for 15-30 min.

2 cans Italian diced tomatoes
4 garlic cloves diced fine

4tbs olive oil
2c carrots 3/4' cut
2c celery " "
1can yellow hominy drained
1can white hominy " "
3c cabbage 3/4" cut
6c of a rich beef stock
