Okay, PepperMan, here it is!
*disclaimer : This is not a healthy dish... just sayin' . :)
1 1/2 cups Quick Grits ( NOT instant )
1 stick butter
1 pound Velveeta Cheese
3 eggs, beaten
1/2 cup milk
Cook the grits as directed on package. ( I use a large pot so I don't need to use a mixing bowl, I just mix it all right in the pot I cook the grits. )
When the grits are done, add all ingredients. I cut up the butter in slices, and I cube the Velveeta Cheese to help it al dissolve quicker.
Pour in greased casserole dish ( 1 1/2 - 2 quart )
Bake at 350 degrees for one hour, until browned on the top.
Enjoy!

I love butter grits, cheese grits, shrimp and grits. I even eat my oatmeal savory like grits too.

Jalapeño cheese grits
Yields 4-6 servings
2 cups milk
1 and a half cups water
2 ounces butter
1 cup stone ground grits
1 and a half teaspoons salt
1 teaspoon chopped jalapeño
1 teaspoon chopped red bell pepper
1 tablespoon chopped poblano pepper
2 ounces grated cheddar cheese
2 ounces grated pepper jack cheese
Combine milk, water, and butter in a saucepan and heat on medium while stirring until butter has melted. Stir in grits, then reduce heat to low. Simmer grits, stirring occasionally until they have absorbed most of the liquid and begun to thicken. Stir in salt and remaining ingredients and remove from heat. Continue to stir until the cheese has fully melted.
And if it was up to me there would always be jalapeno in it!
