I'm new here so I hope you don't mind my jumping in to answer.
Yes....mushrooms are a veggie and the wonderful thing about portabella mushrooms is that they are "meaty". They are wonderful cooked on a grill like you would grill a steak. Add some grilled veggies (squash, tomato, onions) and you have a full meal....all veggie and you'll never miss the meat.
Your recipe sounds so good.....makes me want to run out and get some.

portabella "steak"

I know this is nothing new, but I made it tonight and it was just soooo goooood!
In a skillet, I put a bit of olive oil and 1/2 pat of butter. I put in 3 portabella mushrooms, stem down. On top I put 2 cloves of garlic, pressed and salt and divided up another 1/2 pat of butter between the 3 tops. I put a lid on and let them cook a bit. I turned them, salted them and let them cook a bit, then put a bit of shredded mozzarella on each one and sat them aside, lid on.
They turned out so well and I love getting them for 1/2 price at Aldi's too.

Hey I was watching TV today and some cooking show was on with portabella mushrooms.
Here is what I wrote down:
Take mushrooms, remove gills, drizzle with olive oil, bake for a few minutes.
Meanwhile take a can of albacore tune (in water) mix with some celery, parsley (or whatever you want....someone used capers....yum)
Then add a little olive oil. Take mushrooms out of oven.....fill with tuna mixture, cover with a slice of cheese (they used swiss) then broil again for a few minutes to melt the cheese.
Now this recipe was a "low cal" version of the Tuna Melt. This version had 539 calories for 2 mushrooms as opposed to 900+ for 1 tuna melt (made the traditional way)
I'm think I want to have a "mushroom feast" at our house.

I love to make "date night chicken" with portabellas... I saute them with olive oil, salt, cracked pepper then I set them aside. I use the same pan and Then I saute my chicken breasts while I make risotto with broth and a little white wine. When the chicken breasts are done, I put them in a pyrex, top them with the mushrooms and then whatever cheese I have (brie is great, swiss cow, goat, etc) any white cheese really... I heat it up in the oven at 350 until it is all melted and yummy... serve with the risotto. -
