Lemon Pepper Chicken
Chicken (boneless & skinless )
Lemon Pepper seasoning
Olive oil (I use canola it cheaper)
Very simple... place olive oil in hot pan, place chicken in pan, sprinkle with Lemon Pepper , cook until center is cooked through. It doesn't get any easier than that, does it?

er... uh... (blushing with embarrassment) I have a confession to make. I don't cook. I never learned how to cook. It was just me for so many years... I traveled alot with my job... I hit the jackpot when I married my hubby. Hubby was a chef in his college days at ... my spaghetti o's and mac and cheese pale in comparison to his cooking. -

I love that lemon pepper I use it on alot of stuff! Lucky girl Steeler, I hope to have a husband someday let alone one that cooks.
So I like to heat a little olive oil in a pan then add fresh spinach and a small toss of pine nuts (if you worked out otherwise skip the nuts) toss in some balsamic vinigar, don't over cook and enjoy with tadpo's chicken. -

This may look complicated but is really quite simple
1 onion 6 skinless boneless chicken breast halves
3 T olive oil 2 T fresh or dried oregano
1 clove garlic minced salt and pepper
1 1/2 cups uncooked rice juice of 1 lemon -

1 1/2 c water 1 1/2 c chicken broth
Saute chopped onion and garlic in oilfor a few minutes, add rice cook until coated add liquid and mix put in a 9x12 baking dish place chick on top sprinkle with oregano S&P and juice from lemon cover bake at 375 for1 hour uncover for 15 minutes. Enjoy called greek chicken Sorry it went on two posts I don't know what I did -

Here's one that is low calorie and fast and easy to make. Put a pot of water on to boil. While that is heating up, cook a pound of ground turkey. Add your favorite spices. Set the turkey aside or drain it after it is cooked. Sautee any vegetables you have on hand in the same pan. Cook some kind of pasta in the boiling water. For a pound of turkey, I usually use a half of a normal-sized package of pasta. Put the drained turkey in with the vegetables, and add some canned tomatoes with their juice (normal sized can - not the mini can and not the big can.) Get that good and hot and break the tomatoes up while they cook. Taste the mixture and add more spices and/or a splash of wine if the mixture tastes too bland. Drain the pasta and then add it to the tomato-vegetable-turkey mixture. If you like things more saucy, add some tomato sauce or use more tomatoes. Add cheese if you are eating cheese. -

Here is another recipe....and yes it is Chicken! lol
COMPLETELY FOOLPROOF 100% DELICIOUS GRILLED CHICKEN
(6-8 servings)
6-8 boneless, skinless chicken breasts
Marinade:
1 small bottle Paul Newman's Olive Oil and Vinegar salad dressing
1 pkg. Zesty Italian dressing mix (powdered mix)
1-2 T Creole Seasoning
Coarse ground black pepper to taste (about 1 tsp.)
Trim all visible fat and membranes from chicken, then cut small crosswise slits about 1/2 inch apart down the length of each chicken breast. (This helps the marinade penetrate and makes chicken cook more quickly and evenly. It also gives a gourmet look to the cooked chicken breasts.) Put chicken in single layer in zip loc bag. Combine marinade ingredients and pour over chicken. Marinate in refrigerator 6 hours or longer. (This is great to put in the refrigerator in the morning when you go to work and cook after work that night.) To cook, preheat grill to medium high. Have a spray bottle ready to spray flames which will shoot up when you first put the chicken on the grill. Put chicken on the grill with slit side down first for best grill marks. Grill about 20 minutes, turning about every 5 minutes, or until chicken is well browned and firm but not hard to the touch. You can baste with reserved marinade the first few minutes, but be sure chicken is cooked well on both sides after the last time you baste to be sure all bacteria from the marinade is killed.
This chicken could also be cooked in a stove-top grill pan with ridges or a George Foreman Grill with good results.

Here's one that I got from the Lean Plate Club. It originally appeared in Parents Magazine. I'm going to make it with brown rice for more fiber and use tangerine juice instead of orange juice, because I have tangerines from my buddy' tree.
Citrus Chicken
4 servings
Prep: 15 minutes
Cook: 10 minutes
Ingredients: 4
1/3 cup orange juice
1/4 cup low-sodium teriyaki sauce
2 teaspoons ketchup
2 teaspoons cornstarch
1 tablespoon canola oil
1 medium-size sweet red pepper, seeded and thinly sliced
1/2 pound snow peas, trimmed
1 pound chicken tenders, cut into 2-inch pieces
3 cups hot cooked white rice
1. Whisk juice, teriyaki sauce, 2 tablespoons water, ketchup and cornstarch in a small bowl; set aside.
2. Heat oil in a large nonstick skillet over medium-high heat. Add peppers and snow peas and cook for 4 minutes, stirring occasionally.
3. Add chicken and cook for 4 minutes or until cooked through. Stir orange juice mixture and add to skillet. Boil for 2 minutes or until thickened. Serve with rice.
