We are trying to incorporate a deeper vegetarian diet into our family life. So far so good. The only thing I am noticing is that I tend to be compensating for the absence of meat with lots of dairy and salt for flavor. Not good I know. While I use spices ALOT, it just doesn't seem to cut it sometimes. I'm sure as I get better at these recipes, I will find what works. Do you think that it is just a natural adjustment period to finding these foods equally satisfying as their carnivorous counterparts?
For example, tonite I made my famous Chicken Paprekash. Minus chicken and chicken boullion/broth. While it turned out tasty, I did end up having to put in more sour creme to achieve a similar flavor. I used organic veggie broth rather than my usual organic chicken broth. It seemed far more salty to me. But even still, the kids were salting it up because they said it "didn't taste right". I think for me our taste continues to adjust and I'm sure with experience improvements will be made. I, too am trying to not count too much on dairy as I understand what you're saying, and trying to get protein more from tofu, veggie burgers, or beans and rice.
