i have been diagnosed with celiac disease and in the tough process of making huge dietary changes (no wheat, gluten, etc) and am also thinking of becoming vegetarian. I had done this before for about 9 years ago and before my celiac diagnosis. i am noticing a lot of 'fake' meat choices at the grocery store now then when i was veg. before. however, i also notice that many of these products contain wheat, which i cannot have. i live in an area with limited grocery stores. anyone made these big changes and any advice or support? thanks!!

One thing you might want to consider is ordering your "meat" online. Try Pangea (http://www.veganstore.com/), they have a lot of products, although I don't know if they'll fit your dietary needs. I've been able to find most of my food at Whole Foods, but I'm vegan and don't have the same restrictions as you, so I'm not sure how helpful that would be. There's a ton of stuff online, though, so hopefully you can find some products that work for you. Good luck.

Here is an article about healing the damage done by celiac disease, in the article are two links to a huge list of approved foods for those with celiac disease. I am starting to see more and more gluten-free products on the market.

I found this web site as well that lists gluten free burgers. As the web site points out, you really have to read the labels every time you buy a product, since they can change the ingredients. Garden Burgers is the example they used. Once gluten free. And now they dont have any gluten free burgers. There are great recipe books also to make your own burgers.

There is no reason on earth to eat fake meat products. They are very expensive and not worth it for the most part. And unfortunately, the most convincingly meaty fake meats are the ones made from purified wheat gluten! You can get your protein eating meatless chili and other bean-and-grain dishes.

Sometimes in smaller areas, you can have special orders made. However, you usually have to buy the whole case if this is something they do not keep in stock. Some grocery stores will start stocking certain items, the problem for them if no one buys these items, it is their loss. My sister is gluten intolerant and is almost vegan. She is too ill to cook a lot. She does eat salmon out of the can--mixes it with a gluten free maynaise to create a salmon salad.

I am a gluten free vegan... The only real drawback I've found is that TVP has gluten in it... that rules out all the "meat" products. But, I have been on this path for several months, and have had a wide array of wonderful food....
Besides... I think eating a fake burger just makes you want for the real thing... at least it would for me. Bob's Red Mill has a huge line of gluten free flours, and mixes. You bake it yourself, but it's really good. Substitute 1/3 banana pureed for each egg, and either vegan margarine or apple sauce for the butter, and... it's honestly better than the other stuff. Be advised: You will need to let the dough rise for at least twice what the label says in order to get a fluffy loaf. Feel free to direct msg me if you have any questions... There are some real adjustments to no gluten veganism, but it can be done, and delicious.
