Hi all,

About seven months ago my ex and I split and in the subsequent depression pretty much stopped eating and lost 15 lbs from my already skinny body ...

I'm really bad about cooking because, to be honest, I'm not into spending the prep time ... I'm looking for simple recipes (as in I don't want 15 ingredients) that are easy to prepare and/or can be made in a crock pot/casserole dish ... I need to increase my caloric intake quite a bit to gain that weight back in about 3 to 4 months.

For example, last night I made skinless chicken thighs with carrots, potatoes, sage and a dash of salt, in the crockpot. Super simple and tasty.

Anyone have any other simple, healthy suggestions? thanks ...

" I know the feeling; I live on my own and sometimes when I get home from work the last thing I want to do is spend ages chopping up different vegetables. You might find a few simple ideas in the 'recipes' thread.

I keep jars of things like flaked almonds, sesame seeds and other nuts/seeds, so I'll sometimes add a handful of them to whatever I'm cooking just to add a bit of extra protein and iron. Doing something like that might help build you up a little bit. "

Just the other day i found a recipe for Sweet Potatoes...for something a little different... Add an apple to your sweet potatoes! Here's what i did: cooked the sweet potatoes...then cooked an apple that i sliced and peeled in two tablespoons of butter and added it together with the potatoes and mashed them..topped them with a little toasted coconut!
I keep things around the house like Granola (to add to yogurt or on top of a salad...), Vegetable chips with some hummus, whole wheat wraps..which you can do tons of quick and easy things with..like quesadillas and wraps...or even cut them up and bake them for a few mins to make chip pieces for dips.

" I like to make a big pot of something, soup, stew, chile, etc. That way if there isnt time to cook something healthy, there is always something healthy to eat without having to cook every night.

" I have a skinny daughter. I want her calories to count. Putting a little extra healthy fats seems to help some. That is a extra splash of olive oil, olives, nuts, avacado to whatever I am making. Don't increase bad carbs or bad fats, just to add calories. Stay with low saturated fat protein. Chicken breast instead of chicken thigh for example. "

" You can now buy bags of frozen veggies that are already prepped for soups/ stir-fry, etc. Sure makes it quicker and easier to cook at home. I also use cans of already cooked beans rather than cooking them from scratch, which saves a lot of time as far as preparation for chili, baked beans, etc. "

" I like the bags of frozen stir fry vegies too. Cut up some chicken breast...add the vegies, whatever seasonings you like and presto...easy quick meal. My family loves it over cous-cous with some chow mein noodles. "
