Hi all!

Part of the challenge of healthy eating for me is the effort involved in food prep. I'm looking for simple recipes for cooking chicken breasts or thighs, ground beef, porkloin or ground venison. (All the meats we have lots of in our freezer!)

Any ideas would be really helpful. I'd really like to be able to make dinners in 10 or 15 min, with maybe up to another 1/2 hour cooking time tops.

" I love my Forman grill for fish and chicken breast. If the chicken breast are thick I slice them thinner so it cooks fast. Spray it with olive oil Pam so it does not stick.

Right now apples are in season. I have been making lots of chicken salads using canned chicken or chicken breast that has been grilled. Its a great way to use left over chicken too. I don't cook with recipes much so I just got to tell you some of the things I put in my chicken salad. I never make it the same way twice so just dump in what you like and is healthy. Apples, dried cranberries, dried apricots, celery, red peppers, onions, curry, grated ginger. cinnamon, chili peppers, pecans, almonds, fat free mayo or yogurt. I serve it on a bed of baby greens with red grapes on the side. I top the whole plate with a generous amount of fresh chopped parsley and a drizzle of oil oil.
