I was wondering if we could start a topic for the basic homemade recipes you guys have, or have found online. You know that basics. Pasta, bread, sauces, salad dressings, odd salad additions, that kinda thing. Or anything else you guys got! I'm always looking for new things that I can make homemade. My boyfriend loves cooking from scratch. So I'm always looking for new stuff.

To get it started, this is one that I found that I really want to make. But not sure if I'll be able handle the massive amounts of ingredients called for here haha.

Once you taste this homemade spaghetti sauce, commercial spaghetti sauce just won't do! This recipe has been in my family for a couple of generations, and it is amazing. You can vary the amount of sugar and the amount and types of vegetables to your own taste. You can also cook it for a shorter or longer amount of time, depending on how thick you want the sauce to become.

Homemade Spaghetti Sauce

Ingredients for homemade spaghetti sauce:

1 peck of tomatoes
3 stalks of celery, chopped coarsely
1 green pepper, chopped coarsely
10 onions, chopped coarsely, divided
2 very large cloves of garlic, pressed
1 tablespoon oregano
5 bay leaves
1 1/2 tablespoons basil
1 tablespoon Italian seasoning
1/8 teaspoon crushed red pepper
1/2 cup sugar
2 tablespoons salt
18 ounces tomato paste
32 ounces sliced mushrooms
Instructions:

Blend tomatoes, celery, green pepper, and half of onion in blender to desired level of chunkiness. We like our sauce fairly smooth, so we blend ours for a good long while on Chop.
Transfer blended vegetables to a very large pot (at least 8 quarts). Add spices, tomato paste, mushrooms, and remaining onions. Cook for 3 hours, or until desired consistency is reached. If you like your sauce thicker, you might want to cook it longer than 3 hours. If you like your sauce on the thin side, don't cook it as long.
Remove bay leaves."

" Well I recently got one of those hand-held stick blenders, so I've been making up huge batches of soup in a catering-sized pan. What I don't eat on the night, I just take in to work the next day in a flask :)

Here's a nice simple one - onion, garlic, leeks, broccoli, potatoes, some mixed herbs and a handful of black mustard seeds, salt, lots of black pepper. Cook it all up and blend it into soup, serve with crusty bread and a good sprinking of grated cheese on top. "

" I love to make my own salsa in the food processor. Unfortunatly I do not have an exact recipe, and it would vary depending on how spicy it is desired:
Tomatoes (plum or roma are best because they have the strongest flavor and color)
Onions (any kind - but green are nice)
Peppers (with or without seeds, depending on how hot you want - and remember, the smaller the pepper, the spicier it is)
Garlic
Cilantro
Cumin
Salt and pepper
Lemon, lime, or even orange juice

Whir it in the food processor until desired consistency. You can also use a blender, but it is harder to get a even texture throughout. "

" Thanks so much! Matt and I LOVE salsa and it's so expensive in the market. But we go through it so fast. I never thought of making that as a home made thing but it's definitely something that I could try! We don't have a food processor but we do have a blender. As long as I pulse it and mix it up every couple pulses it should be alright. "

" Thank you to all of you for these recipes. I'm new here but I have already received nice ideas for many recipes. My husband makes a wonderful salsa too & I put it on cottage cheese for my breakfast at work on Wednesday. I love the spicy kick to wake me up in the mornings on Wednesdays at work. Because I have a chronic back condition, I use a standing work station at work. I think the spicy salsa gives me an extra kick in the morning. I also love it on baked potatoes to give me more veggies and on scrambled eggs or eggbeaters too. Anyway, thanks again for the new recipes from a new person. I feel so much better since eating healthy & keeping the extra weight off my back. I still have my back problem but the pain is less from the walking and the healthy eating. "

" I've honestly never had cottage cheese. I'm extremely biased to foods with unpleasant textures. For example, the taste of lobster is good, but I can't eat it because of it's texture unless it's cut up very small into a larger dish.

Another recipe I can share with you guys I make all the time now. It's wicked good and quite easy to make.


1 lb Trader Joe's cheese ravioli (if you don't have any trader joe's, it's a dried filled pasta, found in the pasta aisle. You can get frozen too, I just find these better because they're smaller)
1 lb. chicken sliced into strips or cubed (uncooked)
1 can diced/stewed tomatoes
Extra virgin Olive Oil
Salt, pepper, Thyme, Basil, Oregano (or whatever spices you prefer)
Shredded cheese (Monterey jack is my favorite)

Cook the pasta in boiling water, shaving off 5 minutes or so off the cooking time. Drain and transfer to a large baking caserole dish. Toss in EVOO, pour the can of tomatoes (juice and all) over the top. Mix. Add chicken strips/cubes on top. Cover with aluminum foil and bake at 350 for about a 1/2 hour or until the chicken is cooked through. Uncover, top with cheese, and replace into the over for another 5 minutes until cheese is melted.

SO good served with a salad. And it's not bad for you either. Not to mention it's SUPER cheap to make :D

I'm making this tonight. It sounds DELICIOUS. I'm going to use extra chicken broth instead of white wine. And I'll be making a cubed and baked potatoes and onions for my boyfriend, and baked brown sugar sweet potatoes for me to go along with it. Probably crack open a can of corn as well.

" Kinda disappointed. The chicken got soggy because of being in the sauce. Next time I would probably bread it with a mixture of flour and breadcrumbs and dip the chicken in egg first. That way it makes a stronger crust. Then I'd put the chicken aside and cook the sauce separately then only put the sauce on it once it's plated. It tasted really good, it was just soggy. I'm making bread today from scratch though! And sweet dinner rolls. Here are the recipes!
