Someone here just posted saying they make coconut-milk yogurt. Now how in the world do you do that, & isn't it awfully high in fat?

" I make it. It's not difficult at all. You have to buy non-dairy starter (I use GI Progurt that I get online). 3 cans of coconut milk, 1 tsp. of maple syrup, 3 Tbs. tapioca starch. Bring to boil (130F), then cool down to 90F, add 1/2 tsp. of starter. Incubate for 24 hours (my yogurt machine makes 7 5-oz jars, and it cost about $30). I use it in baking, my daughter dips fruit in it. Add dill and minced onions to it and it makes a nice creamy vegetable dip. You can make frosting with it that tastes like cream cheese frosting, etc. It's really good. And it's good fat, not bad fat. "
