Recommendation: DF/SF/GF Ice Cream

As far as I know...there is NO vanilla ice cream on the market that is soy, dairy, and gluten free. Here is a recipe I came up with based on a recipe in Cook 1.0 by Heidi Swanson. It is more "ice" than "cream". If you don't have soy issues, I bet adding soft tofu would make this more of a "cream":

Gluten, Soy, Dairy Free Vanilla Ice Cream

3 cups Westsoy Rice Milk
1 vanilla bean, seeds scraped
1 cup sugar
3 tbsp plus 2 tsp gf cornstarch
1 tbsp gf vanilla extract

Heat 2 cups milk and vanilla bean over med-low heat.

Pour remaining 1 cup in small bowl and add sugar and cornstarch. Blend well.

When milk starts to simmer, remove from heat and add cornstarch mixture, constantly stirring.

Return to heat and continue stirring until mixture thickens (10-12 min). Remove from heat and add vanilla extract. Refrigerate 4 hours or overnight. Pour into ice cream maker and follow manufacturer's directions. Freeze.

Once you get the hang of vanilla, feel free to add strawberries or chocolate (or whatever) to the mixture for different flavors. (I haven't done it yet, but I would add it in the beginning and heat the fruit/chocolate...)

There is soy lecithin in every flavor listed on their website and some form of soy in all the flavors they carry at both Wild Oats and Trader Joe's in my area. I actually wrote a letter to the Rice Dream company asking WHY they do that....it would stand to reason that if you drink soy milk it's because you are sensitive to dairy and/or rice and if you drink rice milk it is likely because you are sensitive to to dairy and/or soy. So, then, why put soy in rice milk products????? I JUST don't get it. The same goes for oat milk and a lot of nut milks....they either contain some sort of dairy/whey or soy. "

" I know So Delicious is dairy, egg, nut free. Unsure of soy, or if there are a few products without soy. My daughter who is allergic to all of the above loves their ice cream sandwiches. She's sooo happy she can indulge in "ice cream" as well as her older sister with no allergies. "

" Just checked the website and "duh" the "so" in so delicious is short for soy! Seems so obvious right? Anyway, they do have non-soy "novelty" bars that are also allergen free, but you are right... the search continues for the holy trinity--no soy, no dairy and no gluten! "
