I have been trying to "give" my kids Chicken Pox because they deal with it better at a young age, but Im having trouble finding it anywhere. Is it just a touch by touch disease or does it just show up?

Specifically, chicken pox (AKA varicella) can be transmitted when the virus comes in contact with the mucosa of the upper respiratory tract (mouth, nose, etc.) or the conjunctiva (of the eye). It usually occurs via direct contact with another person who has the virus but can also be spread from respiratory tract secretions (e.g, following a sneeze or a productive cough). Prior to the existence of the vaccine, it was be rather easy to come accross the illness prior to entering gradeschool. Now, however, this is not the case and finding others to expose your children to can be rather difficult.
Have you discussed the vaccine with your ped? Dr. Jeremy
