We do need to be reminded that this is a serious illness. I know too many diagnosed people who still have problems with family believing it is a "fad diet". And there are even people here in this support group who believe that it is just an annoyance.

My mother asked me this morning how I am doing with my gluten free "diet"; I told her that it IS NOT a DIET; it is, and has to be, a lifestyle change. And that is how I am approaching it, because "diet" implies a temporary eating change. Not something that has to be permanent.
I wonder if the proliferation of pesticides and chemical fertilizers hs any bearing on the increasing incidence of Celiac patients. Or maybe the profliferation of genetically modified foods? Or could it be the strong usage of antibiotics in our meats? Or maybe some wierd amalgamation of all the above?

I think it is very important to not only have a gluten free diet, but to have an organic diet as well. There are so many poisons in our food that the industry is calling genetically engineered or modified. It is a major problem that corporations are deciding whats the best interest for society, when it all boils down to the dollar that they make. Sure our lifespan has increased but at what cost. Living longer, but living in pain and agony.

Which is why I grow as much of my own food as I can, and avoid chemicals in the ones I don't. I also stick with heirloom varieties for my vegetable garden.
