I didn't know if I was supposed to get the blood work done again or have those other test done. It's been five years.Even tho I see my reg doc often enough the last time I had the blood work the specialist said there was no active sprue in my blood but lately every time I eat food my stomach hurts gets bloated and of course I'll be in the bathroom a few times later on. the cycle sucks and I try so hard to keep away from any gluten.

There really isn't much a doctor can do for you with this disease. As long as you eat gluten the docs are going to blame your trouble on Celiac Disease. This is a reason why you want to adhere strictly to the diet.

I've noticed one pattern or so this is what I believe I am seeing.
It seems that if I eat gluten free breads and things like that, rather than fresh veggies, meats and other stuff (NOT) processed; that I seem to have less incidents with the HUGE belly swell. I'm still learning so it's just something I think is true at this time. I've been lazy and was eating brown rice bread with cashew butter and peach jam. It's a great taste and no cooking. I have noticed there isn't enough fiber in these breads. So I'm having trouble with constipation. The whole grain that I can NO longer eat had a lot of fiber. There was one gluten free bread I loved but I'm allergic to it. It has poppy seeds and stuff like that and the texture felt almost normal from the old days.

I JUST CAN'T SEEM TO GET THE RICE BREAD TO TASTE GOOD. SO I EAT THE WAFFLES AS BREAD. NOW THEY CAME OUT WITH APPLE CINNAMON FLAVOR (VANS GLUTEN FREE)TOASTED BUT I CAN'T LIVE OFF WAFFLES SO RECENTLY I MADE GLUTEN FREE PANCAKES AND PIZZA. THEY WERE GREAT BUT IT TAKES SO MUCH TIME WITH THREE KIDS AND MOST THE TIME THREE DIFF MEALS. WE GO TO MCD'S AND I GET THE GRILL CHICKEN NO SAUCE AND NO BREAD BUT STILL IT WHAT EVER I EAT I HAVE CRAMPS BLOATING DIAREA AND NAUSEA NOT TO MENTION PAIN IN MY JOINTS ALL OF THEM MNOSTLY JAW AND MIGRAINE SO ALL THIS CAUSED BY CELIAC?

Out of curiosity, I googled McDonalds and finally found the ingredients list for all their products. Under GRILLED CHICKEN BREAST FILET, the seasonings listed.... "hydrolyzed [corn gluten, soy, wheat gluten] proteins......" My guess is that this in in a marinade that they use. They list the things it's prepared with (oil, etc) separately and buns are listed separately, also. This may be the source of your misery.
Regarding your rice bread, do you heat it for a few seconds in microwave just before eating? That usually helps any GF breads, etc. If you heat it too long, however, it becomes a hocky puck. 10 seconds is usually enough. I have a good GF & Yeast Free bread recipe sent to me by another Celiac in Oregon. It is super easy to make, and a heck of a lot tastier and cheaper that most of your commercial bread or mixes. Whole foods has their own brand as most stores. It's the 365 brand. They have a box of easy to make bread. If felt like bread.
It was so BLAND it was unreal. I don't know if it said to add salt and I know I didn't. That may be the problem. I think I will add somethings to it in the hopes it will not be so bland. It actually, felt like regular bread. The HUGE problem I have is not having enough grain so now I'm constipated. This is very frustrating. YES, time consuming even if you live alone it's a hassel because there is such a reduced desire when being ALONE all of the time.

I haven't tried BAKING rice bread yet. I do buy it at Whole Foods. I sorta squeezed gently the white rice and the brown rice bread. The brown rice bread had more bounce. It's likely a lower glycimic(sp) bread too.
Hi glycemic foods will also cause swelling or belly bloats. There usually is more sugar and preservetives incontents in prepared foods. Before I was gluten free and dropped the prepared foods, my belly went WAY DOWN. Maybe I've been lazy due to some depression with this illness.

I would love the recipe I try to bake a lot in the winter and it's usually not for me to eat but I'd like to try any new bread cause the nearest whole foods is about 45 min away. And the frozen brown and white rice bread toasted or mic'd is crappy. I do get too excided when I buy new stuff only to be disappionted. When all I ate was salad and fruit I was healthier I didn't have many symtoms . Maybe I should just get a juicer and forget about the normal way of eating.

GLUTEN FREE, YEAST FREE BREAD
1/4 cup corn meal 3/4 cup rice flour 1/2 cup corn starch 1/2 cup bean flour 4 tsp baking powder 3 Tbsp white sugar 2 tsp xanthan gum 1 tsp salt 5 eggs, beaten 1/2 cup milk 1/2 cup water 5 Tbsp. oil Preheat oven to 350F, and grease a loaf pan. Thoroughly stir the white sugar, xanthan gum, salt, baking powder, rice flour, corn starch, corn meal, and the bean flour together. Thoroughly mix the oil, eggs and all other liquids. Add dry ingredients, mix well. Pour mixture into loaf pan and quickly put into ove. Bake for 50-60 minutes. Cool on a rack before slicing. I slice the whole loaf (about 15 slices), keep 3 or 4 out, and put the rest in plastic bags in freezer until I'm ready to use them. When ready to eat the bread, we nuke it for 10 seconds, and it's like it's fresh made. ENJOY!!
