1/4 cup corn meal
3/4 cup rice or sorghum flour
1/2 cup corn starch
1/2 cup bean flour
4 tsp baking powder
3 Tbsp white sugar
2 tsp xanthan gum
1 tsp salt
5 eggs, beaten
1/2 cup milk
1/2 cup water
5 Tbsp. oil

Preheat oven to 350F, and grease a loaf pan.
Thoroughly stir the white sugar, xanthan gum, salt, baking powder, rice or sorghum flour corn starch;, corn meal, and the bean flour together.

Thoroughly mix the oil, eggs and all other liquids. Add dry ingredients, mix well, and pour mixture into loaf pan and quickly put into oven.

Bake for 50-60 minutes. Cool on a rack before slicing.
