Mexican Cornbread
This original recipe is already gluten free. 1 cup corn meal 1 cup melted butter 2 eggs 1/2 teaspoon salt 1/2 teaspoon baking powder 1 cup sweet milk (add 2 tablespoons sugar) 1 8 oz. can of cream style corn 1 large onion (chopped) 1/2 pound chopped Velveeta Cheese 4 pods chopped Jalapeno peppers. 1 pound chopped shrimp Mix all ingredients together and bake for 45 minutes in oiled pan. Mixing ingredients together and baking the next day�it taste better. |

I'd love to try this one. What is the amount for the salt ad the baking powder? My computer does not display that font properly so I have a little square instead of an amount.

Sorry, I never saw that mistake. I don't get on the site much anymore. I made the correction. I hope you can read it now. This taste so good--it is now one of my families favorites--even if they are not on a gluten free diet.
